Good Vibes, Gorgonzola, and Grazing Tables: A Locked-In Week at Graze

I don’t want to jinx it, but I think I might actually have my life together? At least for the past week I did. Usually, my life is a beautiful, chaotic mess of cheese crumbs and forgotten coffee mugs and I’m trying to balance being a business owner and a human being. But this past week? The week of all weeks. It was different. I was locked in.

You know that feeling when the stars align, your brain actually produces the right amount of dopamine, and you just get stuff done? That was me. I felt like a productivity ninja. I didn't just survive the week; I absolutely crushed it. No chaos, no "where are my keys?" meltdowns, just straight-up good vibes and big moves for Graze.

The Great Tax Saga

First of all, let’s talk about the dreaded T-word. Taxes. (I know, I know, even reading that word makes me want to take a nap). Usually, I’m the queen of procrastinating on administrative stuff because boringgg. But Monday morning, I woke up and chose violence, against my to-do list. Top-tier mood, really.

I got everything bundled up and FedEx’d my taxes down to Florida on Monday afternoon. And get this: I got them back on Tuesday morning. I feel like I should get a trophy or at least a very expensive candle for that kind of turnaround. It’s those little wins, honestly. If you’ve been following my journey, you know the juggle is real and usually, taxes involve a lot more tears and a lot less efficiency. But not this time. I’m basically a professional logistics coordinator at this point.

Lunch Dates and Retail Therapy

Since I was so ahead of schedule, I enjoyed myself a Tuesday lunch date with my mom. We went to Copper Door, which is always a vibe. There’s something about sitting down for a mid-week lunch that makes you feel like you’ve hacked the system. We had a great meal, caught up on all the family tea, and then did a little shopping.

I’m convinced that "productive shopping" is a real thing. I wasn't just buying random stuff (okay, maybe a little bit), but I was clearing my head. It’s so important to step away from the kitchen and the computer sometimes, especially when you’re running a small business. If I don't get out and see the sun (or the inside of a TJ Maxx), my creativity starts to feel a little stale. And we can’t have stale energy when we’re building the best cheese board in Chelmsford!

Thursday I also went to Pressed Cafe with Casey from LittleTown Coffee for lunch, and yes, we got espresso martinis, which felt extremely on brand for the two of us. We had so many laughs, great food, and just really great company all around. Also, little shout-out to his shop in Westford: if you guys want to snag that bananas foster coffee, go visit LittleTown Coffee because it is so, so good.

The Inbox is Sizzling

Speaking of business, can we talk about the inquiries coming in?! Emails have been coming in non-stop with people looking for grazing tables and I am here for it. We have a bunch of grazing table inquiries for the next couple of months, and I have my fingers and toes crossed that these all lock in.

There is something so magical about a full-blown grazing table. It’s not just food; it’s an experience. It’s the centerpiece of the party where everyone hovers, picks at the perfect piece of brie, and raves about the honey comb. I’ve been dreaming up some new layouts and flavor profiles, and I really hope I get to bring them to life for these upcoming events. The Meal Prep Redemption Arc

Last week’s meal prep was... well, let’s just say there were some lessons learned. If you remember my previous post, you might recall the "tiny meatball incident." (If you don't, just know it wasn't my finest hour). But this week? The meal prep was absolute fire.

I decided to go a little fancy-casual for the meals this week. First up: Steak with Gorgonzola butter. *Chef’s kiss.* There is something about the way that funky, creamy Gorgonzola melts into a hot steak that just makes everything feel right in the world. I paired it with honey and roasted potatoes. The sweetness of the honey with the saltiness of the potatoes and the richness of the steak? Absolute perfection. I made extra for the family so we have a couple of meals locked and loaded. No "what's for dinner?" panic at 6:00PM this week!

But wait, there’s more. I also did some thick AF bone-in pork chops. I made a cherry chipotle BBQ sauce from scratch that was the perfect balance of sweet and smoky with just a little kick.

And the side dish? I really outdid myself here, guys. I made a blanched green bean, potato, dill, lemon, and caper salad. It’s fresh, it’s bright, and it tastes like spring in a bowl. It’s the perfect counterpoint to the heavy, savory pork chops. I made a massive batch of that too, because it actually gets better as it sits in the fridge and the flavors marinate. I made some other things but they aren’t that exciting as much as that steak.

Breakfast of Champions (and Allergy-Friendly Wins)

I didn't stop at dinner, though. I went full "Pinterest Mom" on the breakfast prep. I made coconut cream pie overnight oats that looked so good I almost didn't want to eat them.

But here’s the thing: I have a girl with a coconut allergy, and I would never want her to feel left out of the deliciousness. So, I whipped up a Key lime pie version just for her! No coconut, but all the tangy, creamy goodness of a Key lime pie. Honestly, I might have liked the Key lime ones even better. It’s so important to me that everyone can enjoy what I make. We’re all about that inclusive food energy over here.

Good Vibes Only

Overall, it was just a really solid week. No chaos, no emergencies, just good food, hard work, and great company. It kind of felt like the universe was finally tossing me a tiny little treat after this massive chaos season.

I’m feeling refreshed and weirdly optimistic for the next few weeks. I’m excited for the sunny weather, patio season, outdoor grazing, and alsoooo I’m going to get a fresh new hair do this week for the season we’re heading into, which honestly feels very main character of me. Tiny reset, big energy.

Also, I got to see the new Dracula movie with Caleb Landry Jones last year before it was streaming and loved it so much I actually bought it to keep forever, which is insane because it’s literally the only movie I’ve ever bought.
